    Ingredients:

    • onion: 1
    • whole grain pearl couscous (or orzo): 1 cup
    • filtered water: according to packaging
    • sweet potato: 1 large
    • white wine: ¼ cup
    • fennel bulb: 1 large
    • sage leaves: 5-7, chopped
    • butter (or olive oil): 5 tablespoons (divided)
    • Swiss chard: ¾ cup chopped
    • toasted pine nuts and grated parmesan cheese: for garnish (optional)
    • salt and pepper: to taste

    Directions:

    Step 1: Dice onions.

    Step 2: In a small sauce pan heat 2 tablespoons of olive oil. Add diced onions and saute until fragrant (3-5 minutes)

    Step 3: Add pearl couscous (or orzo), saute for an additional 2 minutes.

    Step 4: Add water and cook according to packaging.

    Step 5: Chop sweet potatoes into 1/2 inch pieces.

    Step 6: In a large skillet, heat 3 tablespoons of oil. Add sweet potatoes in an even layer in skillet. Cook over high heat until the edges begin to caramelize. about 5 minutes. Flip over and cook for an additional 2 minutes.

    Step 7: De-glaze pan with white wine.

    Step 8: Chop fennel into 1 inch chunks.

    Step 9: Once all of the wine has evaporated, add chopped fennel, sage and butter. Season to taste with salt and pepper. Saute over medium-low heat, until fennel softenes, about 5-8 minutes.

    Step 10: Add swiss chard, and cooked couscous. Mix until all of the vegetables are well incorporated.

    Step 11: Serve warm. Garnish with toasted pine nuts and grated parmesan.
