Broccoli Pecorino Fritters Recipe

Ingredients:

  • 3 cups chopped broccoli (fresh or frozen)
  • 2 garlic cloves
  • ½ cup oat flour (or whole wheat)
  • 1 large egg
  • 1/3 cup grated pecorino cheese (or parmesan)
  • ¼ teaspoon red pepper flakes (optional)
  • salt & pepper
  • oil for frying

Preparation:

Step 1: Boil or steam broccoli florets for about 5 minutes, or until fork tender. Drain broccoli and allow to cool completely.

Step 2: Chop cooled broccoli into ½ inch chunks.

Step 3: Finely chop, or crush garlic clove.

Step 4: In a large bowl, mix together chopped broccoli, crushed garlic cloves, oat flour, egg, pecorino cheese, red pepper flakes, and salt + pepper. Form into 3 inch wide patties.
 

Step 5: In a large, non-stick skillet, heat about 2 tablespoons of oil. Add patties to skillet (in two bathes). Cook on one side for about 3 – 4 minutes (or until golden and crispy). Flip fritters, and cook on the other side for an additional 2 minutes.

Step 6: Before serving fritters, drain on a paper towel. Serve warm.
