Upside-Down Apple Muffins Recipe

Ingredients:

  • 1 tablespoon butter
  • 2 apples
  • 2 tablespoons cane sugar
  • ¾ cup spelt flour (or whole wheat flour)
  • ½ cup oat flour (or whole wheat flour)
  • 1/3 cup almond meal
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • teaspoon ground cinnamon
  • ¼ teaspoon all-spice
  • pinch of sea salt
  • 3 eggs
  • ½ cup yogurt
  • 1/3 cup olive oil
  • ¼ cup honey
  • 1 teaspoon vanilla extract

Preparation:

Step 1: Preheat oven to 350 degrees, and lightly grease your silicone muffin trays with butter or oil spray.

Step 2: Peel, core and slice apples in to bite-sized pieces (about 1 inch).

Step 3: Make the apple mixture: heat butter in a medium skillet. Add apples and sugar and cook until soft (about 10 minutes). Set apple mixture aside to cool.
 

Step 4: In a large bowl, whisk spelt flour, oat flour, almond meal, baking powder, baking soda, cinnamon, all-spice, and salt. After ingredients are thoroughly incorporated, add yogurt, olive oil, honey, and vanilla extract. Whisk batter until well incorporated.
 

Step 5: Once the apple mixture has cooled, evenly divide the mixture among the 12 greased muffin cups.

Step 7: Using a ladle, evenly pour batter over apples.

Step 8: Bake for 25 minutes, or until golden brown. Once muffins cool, invert them onto a baking sheet. Serve warm or at room temperature.

Note: You can easily make oat flour at home, by blending whole old-fashioned oats in your food processor or blender.
