Easy Jalapeño Popper Chicken Skillet Recipe

  • 1 whole rotisserie chicken
  • 4 slices thick-cut bacon, cut into ½” pieces

  • 3 cloves garlic, finely chopped
  • Kosher salt
  • 1 block of cream cheese
  • ½ cup heavy cream or half-and-half
  • 1 cup sharp cheddar, shredded
  • Fresh cilantro, chopped


  1. To make a Jalapeño popper chicken skillet recipe, preheat oven to 400° Fahrenheit.
  2.  Remove the breast piece from the rotisserie chicken and set aside. Shred remaining meat, reserving skin and bones to make homemade stock (if you like).
  3. In a medium heatproof skillet over medium-high heat, cook bacon, stirring occasionally, until crispy (about 6 to 8 minutes).
  4. Add jalapeños along with garlic and cook until fragrant. Then, season with salt.

  6. Top the skillet with cheddar. Slice chicken breasts against the grain into ½” slices and fan them out on top of the cheese.
  7. Bake jalapeño popper chicken mixture until the cheese is melted and the sauce bubbles (about 15 to 20 minutes).
  8. Top with sliced jalapeños and cilantro before serving.
