Super Easy Eggless Pancake Recipe for Breakfast

  • 1 tablespoon water
  • 1 teaspoon vanilla extract

Preparation

  1. To make the fluffy eggless pancakes, whisk together the dry ingredients (flour, sugar, baking powder, and salt) in a bowl.
  2. Melt two tablespoons of butter in a glass measuring cup. Then, add milk, oil, water, and vanilla extract. Whisk together until combined.
  3. Now, pour the butter mixture into the dry ingredients and whisk until just combined. Do not overmix or overstir. Lumps are completely fine in pancake batter!
  4. Cook the eggless pancakes in batches. Melt half a tablespoon of butter in an iron skillet (or nonstick pan) over medium-low heat. Add two ¼-cup scoops of pancake batter, and cook until bubbles appear around the edges and the top starts to dry.
  5. Flip and cook the other side for a minute or just until set. Remove from heat and place on a wire cooling rack so they don’t get soggy while the rest of the batch cooks.
