Step 1: Begin by roughly chopping the fresh spinach. Then thinly slice one large scallion and dice up your grape tomatoes. Add more or less of each to suit your personal taste, but my personal advice is the more spinach the better!
Step 2: Combine the plain Greek yogurt, light sour cream, and shredded Parmesan cheese in a small mixing bowl, and use a rubber spatula to mix well.
Step 3: Add Hidden Valley® Original Ranch® Dips Mix, and fresh cracked black pepper to taste. I added quite a bit of pepper to mine, because it pairs really well with the saltiness of the Parmesan and the flavor of the Hidden Valley® Original Ranch® Dips Mix, but you can add it incrementally until you find a balance that suits your palate.
Step 4: Add your tomatoes, scallion, and spinach to the mixing bowl and fold into the dip mixture until well combined.
When you're ready to snack, transfer your dip to a cute little bowl and serve it up alongside your favorite flavor of pita chips, assorted fresh veggies, or chunks of diced up rye bread. With just a few minutes of prepping, chopping, slicing, and mixing you have a super yummy dip that's party-ready and so tasty your guests will go crazy for it.
