Cardamom-Apple Scones Recipe
These apple scones are made up of wholesome grains and oats, and have a yummy exotic twist!

Ingredients:
- Granny Smith apple: 1
- whole spelt flour (or whole wheat/ all-purpose): 1 ¼ cups
- old fashioned oats: 1 cup
- almond meal: ¾ cup
- all-natural cane sugar (plus more for sprinkling): ¼ cup
- baking powder: 1 teaspoon
- baking soda: ½ teaspoon
- ground cardamom: 2 teaspoons
- ground cinnamon: ½ teaspoon
- salt: ½ teaspoon
- 1 whole orange: zest only
- honey: 3 tablespoons
- ricotta: ¾ cup
Directions:
Step 1: Preheat oven to 400 degrees. Line a baking sheet with parchment paper.
Step 2: Peel, and dice apple into 1/2 inch chunks.
Step 3: In a large mixing bowl, combine flour, oats, almond meal, sugar, baking powder, baking soda, cardamom, cinnamon, and salt together.
Step 4: Cut butter into 1/2 inch cubes, and add to dry-ingredient bowl. Using finger tips rub butter into flour mixture, until pea-sized crumbs form (dont over work it).
Step 5: Add apple chunks, honey, orange zest, ricotta and buttermilk to the bowl. Using a wooden spoon mix well.
Step 6: Transfer dough onto lightly-floured counter top. (Sprinkle more flour on top if dough is too sticky) Form into 1 1/2 inch thick disk.
Step 7: Cut dough into 8 triangles using a knife.
Step 8: Transfer to baking sheet. Brush tops with milk (or buttermilk) and sprinkle with cane sugar. Bake for 18-20 minutes, or until tops are golden. (Allow the scones to cool completely before removing from baking sheet, about 10-15 minutes)
