There is nothing quite like a slice of cool pie in the summer heat. There are many great flavors to make and one of the easiest, and best, is key lime pie. This classic key lime pie recipe comes together so easily it is virtually foolproof. To cut the acidic flavor I think it is best served with a topping of whipped cream or side of vanilla ice cream. If the day is particularly hot, allow it to cool completely and then pop it in the fridge. It will be the best kind of sweet reward after dinner.
Classic Key Lime Pie
Refreshing, tart, and utterly decadent---the perfect pie for summer!
- 9-inch prepared pie crust: 1
- egg yolks: 5
- key lime juice: ½ cup
- 14-ounce can sweetened condensed milk: 1
- frozen whipped topping: to spread on top
Step 1: Preheat the oven to 350 degrees F.
Step 2: In a large bowl whisk the egg yolks, lime juice, and milk until completely smooth. Pour the mixture into the prepared pie crust and smooth the top with a spatula. Bake for 15 minutes or until the center is completely set.
Step 3: Remove from the oven and allow to cool completely. Spread a ½-inch thick layer of frozen whipped topping on top of the pie and chill in the fridge for an hour before slicing and serving.
