Sending warm food to school is really difficult. It is nearly always cold by lunch time unless it's sent in a thermos with a lid. Only recently have I realized that the one sandwich-type food that I can send warm are from this Veggie Quesadillas in Foil recipe. I simply wrap them in aluminum foil the second they are out of the microwave. They're not piping hot but just warm enough a couple hours later and that's what counts!

Ingredients:
- red pepper, finely chopped: ½
- green pepper, finely chopped: ½
- shredded Pepper Jack cheese: ½ cup
- flour tortillas: 2
Directions:
Step 1: Divide the cheese and vegetables evenly amongst the tortillas. Fold them closed and wrap each one in some paper towels.
Step 2: Microwave the tortillas for 20 seconds, or until the cheese is melted. Remove them from the microwave and immediately wrap them in aluminum foil. Pack for school!
More topping ideas: Chopped mushrooms, broccoli florets, black beans, or salsa.
