Peanut Butter, Honey, Banana “Sushi” Rolls

Sometimes, it’s all in the presentation. Peanut butter and jelly sandwich: boo! Peanut butter and jelly “sushi”: hooray! A little effort makes a big difference in a kid’s lunch, so if you want to entice your little to actually eat lunch this year, try these Sushi Sandwiches.

Turning a plain old sandwich into a kid-friendly “sushi” roll is super easy. Here’s how to do it using peanut butter, honey and banana. If you don’t like that combo, use whatever you want. Skip the banana and replace honey with jelly. Spread the bread with hummus and replace banana slices with cucumber. The technique is the same no matter what. 

1. Start simple: first, gather your ingredients—2 pieces of bread and whatever you want to fill them—and a rolling pin. 

2. Cut the crusts off of both pieces of bread. 

3. Roll a first piece of bread flat.

4. Spread topping(s) on the flattened bread. If you are using two spreads—like the honey and peanut butter shown here—spread one topping to cover half of the piece of bread and the other topping to cover the other half. If using, add slices down a line in the middle, being careful not to pile the slices too high.

5. Starting at one of the edges that has only one topping spread across—like the bottom edge pictured here—roll the bread into a log.

6. Cut the log into about six pieces of sandwich “sushi” and repeat with the second piece of bread!
