Cauliflower is not one of those vegetables that my kids willingly request a lot. On its own it can often be a bit too bland for their little mouths. But that’s probably one of its greatest strengths: because it’s pretty neutral, cauliflower can be transformed almost instantly with a little added flavor and light cooking. In fact, it makes a great pizza topping, taco filling, and cheese sauce. It can even be made into rice!
