5-Minute Salted Caramel Ice Cream Cookie Cake Recipe

My girls love, and I mean LOVE, to help me make and bake things. Sometimes it’s more draining than entertaining to monitor them in the kitchen, but projects like this five minute ice cream cookie cake make cake-making a worry-free family affair. Even better, it’s salted caramel flavored! Yes, salted caramel. Your taste buds will think it’s a holiday when they get ahold of this salty/sweet deliciousness.

Forget steaming up the whole house with your oven in the heat of summer—this salted caramel confection gives you and the kids plenty of excuses to hang out with your head in the freezer. Plus, it only takes five minutes of hands-on time to prep this easy treat.  

Supplies:

  • 6″ springform pan
  • salted caramel ice cream
  • vanilla sandwich cookies
  • ice cream scoop or spoon
  • measuring cup

Instructions:

Step 1: Scoop ice cream into springform pan and smooth it into the circular seam of the bottom of the pan. This initial layer will seal the seam to keep the melted, pourable second layer from seeping out of the springform pan.

Step 2: Scoop ice cream into microwavable bowl, and heat for 45 to 60 seconds. Once ice cream has reached a pourable consistency, remove it from the microwave. Pour ice cream into the springform pan until it is half full. Return pan to freezer.

Step 3: Using a butter knife or your hands, cut or crumble 7 vanilla sandwich cookies. Remove ice cream from freezer, and sprinkle the cookie crumbles onto the ice cream in an even layer.  

Step 4: After an hour, remove cake from freezer, and pour remaining ice cream on top of the cookie layer. Return to freezer to fully solidify, about 3 hours.
