    Flaky peach hand pies: a delicious dessert!

    • whole spelt flour: 1 cup
    • cold butter, cut into cubes: 1/2 cup
    • water: 1 tablespoon
    • brown sugar: 2 tablespoons
    • sea salt: pinch
    • ripe peaches: 2
    • minced ginger (optional): 1 teaspoon
    • flour: 1 tablespoon
    • milk: 2 tablespoons


    Step 1: Prepare the dough: in the bowl of your food processor, add the flour, cold butter cubes, sugar, and salt, and pulse a few times. Continue pulsing, while adding the water—a little bit at a time—until dough ball forms. Refrigerate for 1 hour.

    Step 2: Chop peaches into small chunks. Add to a small bowl, with sugar, ginger, and flour. Allow mixture to sit for about 20 minutes. (Strain excess liquid.)

    Step 3: Roll out dough until it's 1/4 inch thick. Using a 3 - 4 inch cookie, or biscuit cutter, cut out circles.

    Step 4: Place 1 - 2 teaspoons of peach mixture in the center of each circle.

    Step 5: Fold over, and seal edges using a fork. Cut 3 slits into each hand pie. Brush tops with milk and bake for 30 minutes, or until golden brown.
