It's no secret that brunch is one of my favorite meals. I've developed countless recipes for breakfast and brunch and just can't seem to get enough. I love entertaining with brunch because it's relaxed and usually a crowd pleaser, and if you choose your dishes wisely, it can been effortless elegance. Take this strawberry cream cheese breakfast casserole, for example. I have made it a ton of different ways using different ingredients from sweet to savory, and it ALWAYS, ALWAYS, ALWAYS comes out AMAZING! It can even be prepared a few hours in advance and baked off right before your guests arrive.
Strawberries and Cream Baked Breakfast Casserole
A sweet & savory brunch creation that is mouthwateringly good.
Ingredients:
- butter: ½ tablespoon
- cream cheese: 1 (8 ounce) package
- sugar: ¼ cup
- strawberries, stems removed and cut in half: 1 pint
- eggs: 3 large
- milk or heavy cream: 1 cup
- croissants: 3 to 4 large, cut in half
Directions:
Step 1: Preheat oven to 350 degrees. Grease a 9-inch deep dish pie plate with butter.
Step 2: Place cream cheese, sugar, and strawberries into a food processor. Process until smooth, about 2 minutes.
Step 3: In a large bowl whisk together the eggs and the milk.
Step 4: Cut croissants in half and line the bottom of the pie plate with the bottom halves in a circular pattern. Pour 3/4 of the cream cheese mixture over the croissants and top with remaining croissant halves.
Step 5: Pour egg mixture over the croissants and press down so that the croissants soak it up. Cover pie plate with foil and bake for 20 minutes. Uncover and bake for 5--10 minutes more or until egg is fully cooked. Remove from oven and cool for 5 minutes before cutting into wedges.
Step 6: Serve topped with extra berries, remaining strawberry cream mixture, or maple syrup.
