Ingredients:
- 1½ cups whole spelt flour
- ½ cup almond meal
- 3 tablespoons oat bran
- 1 tablespoon flax seed meal
- 4 teaspoons baking powder
- ¼ teaspoon baking soda
- ½ teaspoon salt
- 2 teaspoons thyme
- 1 cup finely grated parmesan
- 4 tablespoons butter
- 1 cup buttermilk
Preparation:
Step 1: Preheat oven to 450 degrees.
Step 2: In a large bowl, combine spelt flour, almond meal, oat bran, flax seed meal, baking powder, baking soda, salt, thyme, and grated parmesan cheese.
Step 3: Use your fingertips to rub butter into dry ingredients until crumbs form.
Step 4: Pour in the buttermilk and stir until dough comes together.
Step 5: Place dough on a floured surface, sprinkle more flour on top.
Step 6: Fold the dough over itself several times until it's no longer sticky.
Step 7: Press dough into a 1 inch thick round.
Step 8: Cut out biscuits using a round 2 inch wide cookie cutter.
Step 9: Place biscuits on baking sheet. Bake until biscuits rise and are lightly golden (15 minutes).
Tip: Don't have buttermilk? Use half a cup yogurt and half a cup of milk for a similar result.
