Mini Banana Bread Loaves

Before my daughter wrapped up school in May I did a baking project with her class. We baked these cute little loaves of banana bread with the kids.


It was the perfect activity for kids because they were able to mash up the bananas and do everything in one bowl. You should’ve seen them when I showed them my frozen bananas (which had been thawed), they thought the texture was so gross! This recipe makes one loaf, but for their purposes it made about 6 or 7 small loaves. I found these cute paper bakers at a local baking supply store and they cost $1.50 for 15 of them. So, either way, if you make this is one loaf or several, it is a great baking project for any time of year! —



  • 1 stick unsalted butter, melted and cooled
  • 1 c. granulated sugar
  • 2 large eggs
  • 1 t. good vanilla extract
  • 3 ripe bananas, mashed
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon nutmeg
  • 1 teaspoon cinnamon


1. Preheat oven to 350. Butter and flour a standard 9×5 loaf pan*.

2. Mix together butter and sugar until fully combined. Add eggs and vanilla extract, mix well. Add mashed bananas, mix again until completely combined.

3. In a separate bowl mix flour, soda, and nutmeg.

4. Working slowly, stir flour mixture into egg mixture. Keep stirring until all flour is fully incorporated. The batter may still be a little lumpy from the bananas, this is normal.

5. Pour batter into prepared loaf pan. Bake for 25 – 30 minutes (for mini-loaves), 45 minutes for full loaves, or until top is golden and a cake tester comes out clean.

6. Cool in the pan for 10 minutes. Then, carefully remove it from the pan and let it cool on a wire rack before serving.
