How to Spice Up Plain Old Spinach

Spinach is one of my favorite superfoods. I ate it when I was pregnant with my daughter Ava Grace, because it’s jam-packed with folic acid, iron, potassium, fiber, and calcium, all of which are vital for a baby’s healthy development. (Without adequate amounts of folic acid, your baby may experience developmental defects in the brain and spinal cord.) Leafy greens are jam-packed with vitamin A too, which aids eyesight development, as well as bone and skin growth. Even though I’m no longer pregnant, I can still enjoy all the healthful benefits of spinach!

Of course, eating the same side of spinach day after day can get boring. That’s why I love finding new ways to spice it up! By throwing a handful of spinach in your morning smoothie or cooking it with a little bit of coconut oil and garlic, you can immediately switch it up and enjoy this green in a whole new way.

Try it lightly sauteed in an omelet, or swapping it for lettuce on your sandwiches! I also love using spinach as a pizza topping or blending it into a pesto sauce.
