Step 1: Combine cloves, zest, cinnamon, peppercorns and star anise in a piece of cheesecloth. Tie all four corners together to form a pouch.
Step 2: Pour red wine and honey into a saucepan and add the pouch over low to medium heat. Gently simmer for 10 minutes. Remove spice pouch and ladle the wine into heat resistant mugs. Add more honey to taste
