Wild Rice with Chickpeas and Swiss Chard

Ingredients:
- wild rice, uncooked: 1 cup
- olive oil: 2 tablespoons
- red onion, thinly sliced: 1 small
- garlic, mined: 2 cloves
- swiss chard, chopped: 3 cups
- cooked chickpeas: 2 cups
- ground tumeric: 1 teaspoon
- ground coriander: 1 teaspoon
- salt and pepper: to taste
Directions:
Step 1: Cook wild rice according to package instructions.
Step 2: Thinly slice red onion, mince garlic, and roughly chop swiss chard (leaves only).
Step 3: In a large pan, heat olive oil. Start by sauteeing the onion until transclucent (about 5 minutes). Then add the garlic and cook for 1 minute. Add the chard and cook until slightly wilted, about 3 minutes.
Step 4: Add the chickpeas, tumeric, and coriander, and season to taste with salt and pepper. Mix well, and keep sauteeing for another 5 minutes.
Step 5: In a large bowl, toss the cooked wild rice and the swiss chard + chickpea mixture together. Adjust seasoning and serve warm.
