Pumpkin Mini Cupcakes with Spider Web Frosting Recipe

My daughter is a total cupcake fanatic. I love them too, but I try to limit my family's sugar intake, especially around Halloween and the holidays, when treats abound. That's why bite-sized mini-cupcakes are perfect! They're delicious without being overindulgent. Here is my favorite cupcake recipe, and best of all you can make this with your kids.

makes 48 mini-cupcakes

  • 2 eggs, room temperature
  • ½ cup vegetable oil
  • 1 cup sugar
  • 1 ½ cups all-purpose flour
  • 8 ounces pumpkin puree
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 pinch kosher salt
  • 1 can vanilla frosting from the store
  • 1 red or black decorating gel pen
  • mini-muffin tin
  • 1 toothpick

Step 1: Preheat the oven to 350 degrees. Spray the cups of the mini-muffin tin or line them with paper liners.

Step 2: In a mixing bowl combine the eggs, oil, and sugar. Add the pumpkin and mix well.

Step 3: In a small bowl combine the flour, baking soda, cinnamon, and salt. Pour this into the wet ingredients, mixing slowly, until the flour is fully incorporated.

Step 4: Fill the cavities of muffin tin with the batter so that each cavity is about ¾ full.

Step 5: Bake for about 18 – 20 minutes, or until the tops spring back when touched. Allow them to cool for about 5 minutes in the pan. Then, pop them out and cool on a wire rack until room temperature.

Step 7: To make the spiderwebs on top of the muffins, have your child use the gel pen to make three small concentric circles on top of the muffin. Then, your kid can drag a toothpick from the inner to the outer circle to create the web effect.
