I have to admit, much as I love cooking and being in the kitchen, I am always searching for quick, easy, and healthy ways to fill my kids' lunch boxes. Which is why I'm loving this Melon, Ham, and Cheese Kebabs recipe! I don't even make a sandwich when I pack these because they include fruit, protein, and a vegetable. The best part: both my kids love them!

Prep Time:
Servings: 2 - 3
Ingredients:
- sweet melon (I like Sugar Kiss): 1
- ham, thinly sliced (I use proscuitto): ¾ ounce
- white cheddar cheese: ¾ ounce
- baby spinach leaves, washed and dried: 1 dozen
- extra long tooth picks: 6
Directions:
Step 1: To prepare ingredients for kebabs: cut melon into 6 1 - inch pieces, cut ham into 6 approximately 2x1 - inch pieces, and cheddar into 6 bite-sized pieces.
Step 2: Assemble the kebabs with 1 melon cube, 1 (rolled) piece of ham, 1 piece of cheese, and 2 spinach leaves. They can be added in any order—I like to alternate as follows: melon, spinach, ham, spinach, cheese.
