Ingredients:
candy canes: 8
white chocolate: 8 ounces
milk: 3 cups
heavy cream: ½ cup
pure vanilla extract: 1 teaspoon
pure peppermint extract: ¼ teaspoon
Directions:
Step 1: Peel the plastic off the candy canes. Crush 3 and place in a shallow bowl. Set the remaining candy canes aside.
Step 2: Using a sharp knife or kitchen shears, chop all the white chocolate into small pieces. Place 2 ounces in a microwave safe bowl, and set the rest aside. Microwave the bowl of white chocolate on high for 20-30 seconds. Stir. Microwave for 15-20 seconds more, and stir again. Repeat until all the white chocolate is melted. Dip the rims of 5 small mugs in the white chocolate or use a spoon to cover the rims in white chocolate.
Step 3: Dip the mug rims in the crushed candy canes. Place mugs in refrigerator to set while you make the white hot chocolate.
Step 4: In a saucepan set over medium-high heat, bring milk and heavy cream to almost a boil. Remove from heat. Whisk in vanilla and peppermint extracts, and the remaining white chocolate. Continue to whisk until the chocolate is completely melted.
Step 5: Ladle hot chocolate into prepared mugs. Serve immediately with reserved candy canes.
