Meatless Monday: Soy Ginger Mushrooms Recipe

    • peanut oil: 1 tablespoon
    • scallions: 4 stalks, thinly sliced, plus more for garnish
    • garlic cloves: 3, minced
    • fresh ginger: 1 tablespoon, minced
    • soy sauce: 1 tablespoon
    • toasted sesame oil: 1½ teaspoons
    • freshly ground black pepper: 1 teaspoon


    Step 1: Heat the peanut oil in a large pan over a medium-high flame. Once the oil is hot, add the scallion slices, minced garlic, and minced ginger. Sauté until fragrant and lightly golden, about 5 minutes. 

    Step 2: Add the mushrooms to the pan and keep stirring with a wooden spoon to prevent burning. Cook until soft, about 7 minutes.  

    Step 3: Once the mushrooms are tender, drizzle in the soy sauce and toasted sesame oil, and season with freshly cracked black pepper. Toss to coat and cook for another 3 minutes. Serve warm and garnish with extra scallion slices (optional).
