Meatless Monday: Perfectly Grilled Vegetables for Summer

  • If there is one dish you need to have all set for summer it is grilled vegetables. They are easy to make, and you can grill nearly any vegetable you want. Here is the simple method I use for perfectly grilled vegetables. Once you get used to it you'll have summer meals in the bag. I like to pair grilled vegetables with shrimp kebobs or fish tacos, or just stir them into pasta for an easy meal!

    Grilled Vegetables

    • zucchini: 1, sliced
    • portobello mushroom cap: 1, sliced
    • yellow pepper: 1, seeded and sliced
    • red pepper: 1, seeded and sliced
    • Italian vinaigrette: enough to drizzle


    Step 1: Add all the vegetables to a large bowl and drizzle with the Italian vinaigrette. Stir well until all the vegetables are evenly coated with the vinaigrette. Cover the bowl with plastic wrap and marinate for at least 4 hours, or up to overnight.

    Step 2: Add the vegetables to a large grilling basket and place it on a grill that is at medium flame. Gently toss the vegetables until they are softened and the edges are charred.

    Step 3: Remove the basket and allow to cool slightly. Serve!
