    Servings: 2 loaves


    • ripe bananas: 3, mashed
    • full-fat coconut milk: ¾ cup
    • olive oil: ½ cup
    • eggs: 2 large
    • maple syrup: ½ cup
    • brown sugar: 3 tablespoons
    • white whole wheat flour: 2 cups
    • baking soda: 1½ tablespoons
    • rolled oats: ½ cup
    • walnuts, chopped: ⅓ cup
    • dark chocolate chips: ⅓ cup
    • ground cinnamon: ½ teaspoon
    • salt: a pinch


    Step 1: Preheat oven to 350 degrees F and lightly grease 2 loaf pans. 

    Step 2: In a large bowl mash the ripe bananas. To the mashed bananas, add the eggs, coconut milk, olive oil, and maple syrup. Whisk until well combined. 

    Step 3: To the wet-ingredient bowl, add the sugar, flour, baking soda, oats, walnuts, chocolate chips, cinnamon, and salt. Mix until the batter is blended. 

    Step 4: Pour the batter evenly into the pre-greased loaf pans. Bake for about 55 minutes or until tops are golden brown and a toothpick comes out clean when inserted into the center of the cakes.
