Ingredients:
- ripe bananas: 3, mashed
- full-fat coconut milk: ¾ cup
- olive oil: ½ cup
- eggs: 2 large
- maple syrup: ½ cup
- brown sugar: 3 tablespoons
- white whole wheat flour: 2 cups
- baking soda: 1½ tablespoons
- rolled oats: ½ cup
- walnuts, chopped: ⅓ cup
- dark chocolate chips: ⅓ cup
- ground cinnamon: ½ teaspoon
- salt: a pinch
Directions:
Step 1: Preheat oven to 350 degrees F and lightly grease 2 loaf pans.
Step 2: In a large bowl mash the ripe bananas. To the mashed bananas, add the eggs, coconut milk, olive oil, and maple syrup. Whisk until well combined.
Step 3: To the wet-ingredient bowl, add the sugar, flour, baking soda, oats, walnuts, chocolate chips, cinnamon, and salt. Mix until the batter is blended.
Step 4: Pour the batter evenly into the pre-greased loaf pans. Bake for about 55 minutes or until tops are golden brown and a toothpick comes out clean when inserted into the center of the cakes.
