Banana Nut Breakfast Bars
Make these banana nut bars ahead, and you'll have a week's worth of breakfasts or afternoon snacks!

Ingredients:
- bananas, ripe: 2
- medjool dates: 4
- walnuts: ½ cup
- vanilla extract: 1 teaspoon
- almond extract: 1 teaspoon
- ground cinnamon: 1 teaspoon
- honey: ¼ cup
- spelt flakes (or old fashioned oats): 2 cups
- salt: 1 pinch
Directions:
Step 1: Preheat oven to 350 degrees and lightly grease a 9x9 baking dish.
Step 2: In the food processor, blend the bananas, dates, walnuts, vanilla extract, and almond extract until smooth.
Step 3: In a separate bowl add the spelt flakes and honey. Pour the blended banana mixture into the bowl, and mix well.
Step 4: Transfer mixture into the baking sheet. Bake for about 25 minutes, or until golden brown. Allow to cool completely before cutting into bars.
