Sheet Pan Sesame Chicken and Broccoli For Dinner In 30 Minutes
I’m finding myself constantly in the kitchen these days, with social distancing and staying home with my 3 and 1 year-old girls all day. I’m trying to make meals that require minimum clean-up. It’s like there is a constant pile of dirty dishes in the sink, so sheet pan recipes are really helpful right now. And who doesn’t love sesame chicken? This version is not fried, but it is roasted with broccoli in a quick, flavor-packed soy marinade that takes only minutes to whip up. We’re serving ours over brown rice ramen noodles, but simple steamed rice will be great too.
Sheet pan meals are right up there with slow cooker recipes and casserole dinners, except even better. They can be easily customized to whatever ingredients are in season or whatever you happen to have in your pantry. And sheet pan dinners include a protein and vegetable so they make up a complete meal all on their own. This sesame chicken and broccoli recipe is the perfect example.

chicken breast: 1.5 pounds, cut into 1 inch cubes
onion: 1/4 cup, minced
broccoli florets: 1.5 cups
olive oil: 1/4 Tablespoons
soy sauce: 1/3 cup
honey: 3 Tablespoons
rice vinegar: 1 Tablespoon
sesame oil: 1.5 teaspoons
garlic: 4 large cloves, micro-planed (or crushed)
ginger powder: 1 teaspoon
sesame seeds: 2 Tablespoons
Step 1: Preheat oven to 375 degrees F. In a bowl whisk together the olive oil, soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger powder.
Step 2: Line a large sheet pan with parchment paper/foil/or a silicone baking mat. Toss the cubed chicken breast, minced onion, broccoli florets, and soy mixture together.
Step 3: Spread out the mixture evenly and sprinkle with sesame seeds. Bake in preheated oven for 20 minutes or until chicken in cooked through and golden. Serve over brown rice or noodles.
