Dinner in Minutes: Easy Tomato Basil Soup With Gnocchi

  • We love us some quick and easy one-pot meals. And this tomato basil gnocchi soup is easy comfort food at it’s finest. It’s really a really simple weeknight soup recipe (and you might already have all of the ingredients in your pantry/fridge!) As we (impatiently) await for spring’s arrival, we’ll be keeping warm sipping spoonfuls of tomato soup with parmesan loaded with and pillowy soft gnocchi.

    Requiring only about 30 minutes to cook, this tomato basil soup is a nourishing godsend and your family will be begging for seconds. It’s a meal all on its own — no grilled cheese required.

    • olive oil: 2 Tablespoons
    • white onion: 1 large, diced
    • garlic: 4 cloves, chopped
    • celery: 2 stalks, chopped
    • potato: 1, diced
    • 28 oz. crushed San Marzano Tomatoes: 2 cans
    • chicken or vegetable Broth: 1 Quart
    • dried oregano: 1/2 Tablespoon
    • salt: 1 Tablespoon
    • pepper: 1 teaspoon
    • grated parmesan: 1/2 Cup (plus more for serving)
    • Fresh basil: 1/2 cup, chopped (plus more for serving)
    • gnocchi: 1 shelf-stable package (17.6 oz.)


    Step 1: Heat the olive oil in a stock-pot over a medium-high flame. Add the diced onion and sauté until golden and fragrant, about 5 minutes(stirring continuously). Add the chopped garlic and celery, and sauté for another 5 minutes. 

    Step 2: Add the diced potato, cans of San Marzano tomatoes, broth, dried oregano and salt and pepper. Bring to a boil.

    Step 3: Reduce to a simmer and cover the pot. Cook for at least 30 minutes (can go longer if you have the time). 

    Step 4: After at least 30 minutes of cooking time, add the parmesan cheese and basil. Blend the soup using an immersion blender. Blend until smooth. 

    Step 5: Put the pot back on the fire and add the gnocchi. Cook for about 5 minutes, or until the gnocchi is cooked through. 

    Step 6: Serve hot with extra grated parmesan cheese and fresh basil.
