Who doesn’t want to eat more healthily? But really, why should healthy eating preclude a delicious dessert now and then?
As you’ve probably heard, Mediterranean diets are extremely healthy. (See my article on “Incorporating Mediterranean Foods Into Your Life.”) This recipe incorporates some Mediterranean ingredients into a tasty, easy dessert. It includes olive oil, which is the main source of fat in the Mediterranean, and I’ve been making an effort use it instead of butter in my baking. (Olive oil is a good fat!)
There’s just something magical about a good chocolate chip cookie, and I don’t think that the magic is at all lost in the Mediterranean-Style!
