While spending time with my two boys is my number one favorite Mother's Day activity, enjoying a beautiful, delicious mimosa with friends and family is a close second.
Though a classic Mimosa is made with orange juice, I love mixing my bubbly with other fruit juices. Especially melon juice! And honeydew melon adds a beautiful green hue, as well as a splash of refreshing sweetness that I love.
So spend some time running around with the kiddos, and then sit down and delight in this lovely melon mimosa, savoring every sip along the way.
Mother's Day Melon Mimosa Recipe
Whip up this alternative to the classic mimosa to enjoy with your Mother's Day brunch!

Honeydew melon, cut into large chunks (or your favorite melon): 4 cups
Midori (melon liqueur): 3 tablespoons
fresh berries (blackberries, raspberries, or strawberries): 1 cup, larger berries sliced in half
your favorite champagne, chilled: 1 bottle
Step 1: Add the melon chunks to a food processor fitted with the blade attachment. Blend until the melon is as smooth as possible.
Step 2:Place a strainer over a clear serving pitcher and pour the blended melon into it. Use the back of a large metal spoon to press it to get as much juice as possible. (There should only be small amount of melon pulp remaining in the strainer when you're done.)
Step 3: Set aside 6 of the berries, and add the Midori and remaining berries to the pitcher and gently stir.
Step 4: Just before you're guests arrive, pour the chilled champagne into the pitcher, stir to blend, and set up a pretty serving area.
Step 5:Serve your guests as they're welcomed into your home, garnishing each glass with the berries you set aside.
