Gluten Free Trail Mix Peanut Butter Cookies Recipe

Trail Mix Peanut Butter Cookie Recipe
These cookies are a sweet and satisfying after school treat my kids ask for time and time again.

Servings: Makes about 2 dozen cookies
Ingredients:
brown sugar: ¾ cup
large eggs: 2
creamy, salted peanut butter: 2 cups
your favorite trail mix (see notes): 1 pound
Directions:
Step 1: Preheat the oven to 325 degrees F and line two baking sheets with parchment paper. Set aside.
Step 2: Add the eggs and brown sugar to a medium-sized mixing bowl and whisk them together. Then add the peanut butter and mix with a spoon until it's smooth. Fold in the trail mix and stir until it's incorporated into the dough evenly.
Step 3: Use a 2-inch cookie scoop or a heaping tablespoon to shape the batter, adding them to parchment-lined baking sheets as you go. Gently flatten them down a bit. This batter doesn't spread, so they can be fairly close together.
Step 4:Bake in the preheated 325 degree F oven just until they no longer look wet, approximately 10 to 12 minutes.
Step 5:Let the cookies cool before removing them from the baking sheet. Use a flat-bottomed metal spatula to move them to a cooling rack or a plate.
Notes:These just happen to be gluten free and dairy free, if it matters to you!
