I came up with this recipe for Zucchini Fritters on the fly because I’d had a hectic day and before I knew it, it was almost dinnertime. I hadn’t even thought about what to make. I had a few lingering zucchini in the house and the rest of the ingredients were already in my kitchen. I presented them as “pancakes” and they were an immediate hit. Gotta love any dish that you can sneak veggies into!
These Zucchini Fritters tasted amazing on their own but a dollop of sour cream makes these really delicious. I’m serious, you really need to remember the sour cream.
