Make-Ahead Skinny Vegan Lasagna Recipe

‘Twas the night before school started after winter break, and a certain mommy was excited about getting back into a routine.

I’ve found that in order to have a super smooth week, dinners are best prepared ahead of time, and this is one of my favorites. My whole family loves it. It’s hearty and healthy, and just sweet enough from the roasting process to keep the kiddos happy. (They especially like that while it’s made without cheese to keep it light, I serve it with a bowl of grated Parmesan that they sprinkle all over it.)

Not only can I make this skinny vegan lasagna ahead, but also it will often be enough for two meals!
