Ingredients:
- brown basmati rice (uncooked): 1 cup
- olive oil: 2 tablespoons (divided)
- yellow onion: 1 large
- petit peas (frozen): 1 cup
- fresh dill: 3/4 cup
- ground coriander: 1 teaspoon
- salt + pepper: to taste
Directions:
Step 1: Cook brown basmati rice according to package instructions.
Step 2: While rice is cooking, heat 1 tablespoon olive oil in a large saute pan (with high sides), and saute onion until translucent (about 5 minutes).
Step 3: Transfer frozen peas into a fine mesh strainer. Run hot water over peas until defrosted.
Step 4: Add peas to onions, and saute for about 2 minutes.
Step 5: Rinse, and roughly chop dill (stems removed).
Step 6: Add cooked rice, dill, and coriander to the saute pan. Season to taste with salt and pepper. Mix well, and serve.
