Quick Herb Roasted Shrimp

The other day I had some frozen shrimp on hand and wanted to whip up a really quick and easy meal, so now I’m sharing with you what I came up with.


Since shrimp don’t take too long to cook, I tossed them with some olive oil, seasoned them with dried herbs, and roasted them for a brief time. Then I simply placed them on top of freshly cooked rice and an easy dinner was served!


  • 8 frozen shrimp, shelled and deveined
  • 2 tablespoons olive oil
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon kosher salt


1. Preheat oven to 400F. Line a baking sheet with aluminum foil and set aside.

2. Toss the shrimp with the olive oil, basil, oregano and salt. Bake for about 8 to 10 minutes, or until the shrimp is cooked through. Serve!
