My kids love the combination of ham and cheese, so I came up with these Ham and Zucchini Muffins as a way to add some extra veggies into their diets in a form that I knew they would enjoy. These muffins combine the popular combination of ham and cheese with zucchini and some onion flakes for a little added flavour (you can easily leave this out though if you prefer). I like to decorate ours with some chopped tomato on top, too.
This recipe is super easy to make and both of the boys love to get involved by helping to whisk the wet ingredients and stir the muffin mixture.
As well as making this recipe as ‘regular’ muffins, I also like to mix things up (yep, I’m wild one!) by baking them in mini loaf tins or mini cupcake tins for something a little different. These Ham and Zucchini Muffins are so versatile (and freezer-friendly). They make a great lunch box or after school snack, breakfast on the run or serve a couple of them with a side salad or some steamed veggies for a complete meal.

Ingredients:
self raising flour: 2 cups
onion flakes: 1 teaspoon
grated cheese: ¾ cup
grated zucchini: 1
sliced ham: 100 grams
eggs: 2
rice bran oil: ½ cup
milk: ½ cup
tomato: 1
salt and pepper: pinch
Directions:
Step 1: Line a 12 hole muffin tin with paper cases and preheat the oven to 180℃ fan-forced.
Step 2: Place the self raising flour and onion flakes into a large bowl and add the grated zucchini, ham and grated cheese.
Step 3: In a jug, combine the eggs, rice bran oil, milk and salt and pepper and whisk to combine.
Step 4: Pour into the bowl with the flour mixture and use a large spoon to mix to combine - the batter should be quite thick so don't worry!
Step 5: Divide the mixture between the paper muffin cases until they are around ⅔ full.
Step 6: Finely dice the tomato and sprinkle on top of the muffins then place them into the preheated oven to bake for 18 - 20 minutes, or until cooked through when tested with a skewer.
