Cranberry, Pecan, and White Chocolate Biscotti Recipe
This cranberry, pecan, and white chocolate biscotti recipe is the perfect treat to pair with a warm winter cup of coffee or hot chocolate.
Ingredients:
- eggs: 3, beaten
- vanilla extract: 1 teaspoon
- all purpose flour: 2 cups
- granulated sugar: ¾ cup
- baking powder: 1 teaspoon
- salt: ¼ teaspoon
- white chocolate chips: ½ cup
- store bought candied pecans, coarsely chopped: ½ cup
- dried cranberries: ½ cup
Directions:
Step 1: Preheat oven tok 300 degrees. Line a baking sheet with parchment or a reusable silicone liner.
Step 2: In a small bowl whisk together the eggs and vanilla extract.
Step 3: In a large bowl whisk together the flour, sugar, baking powder and salt. Stir in the nuts, chocolate chips and cranberries. Then add the egg mixture and stir until a dough forms.
Step 4: Divide the dough in half on a floured surface and roll each half into a 7 inch log that is about 3-4 inches in width. Transfer logs onto a prepared baking sheet and bake for 35 minutes. Remove from ovaen and allow to cool on a wire rack. for 10 minutes.
Step 5: Transfer logs to a cutting board. Using a serrated knife, cut logs into 1/2-inch slices on the diagonal. Place biscotti slices onto the baking sheet ad bake for 10-15 minutes on one side, then turn them over and bake for another 10-15 minutes on the other side. Remove from the oven and allow to cool.
