This Easy Apple Cake Tastes Just Like Fall

  • I know it’s not quite fall yet, but I’m ready for it to be here. It’s my favorite season and apple picking is one of our favorite fall activities.  Of course, we always pick way more than we can possibly eat so we usually end up doing quite a bit of cooking and baking with them. There are apple chips and scalloped apples, applesauce, and more… but what we really look forward to the most is baking apple cake.


    This easy apple cake is perfect for making with kids because it uses a box mix as the base. This simplifies the whole process, especially when younger children are involved. It’s moist and delicious with the perfect amount of sweetness and spice – plus large chunks of apple (adding nuts is optional) add great flavor and texture to the cake too.

    Servings: 9-12


    • Cake:
    • yellow cake mix: 1 box
    • water: 1 1/2 cups
    • oil: 1/3 cup
    • eggs: 3 large, at room temperature
    • apples: 6. peeled and cut into 1/2-inch chunks
    • brown sugar: 2 Tablespoons, packed
    • ground cinnamon: 1 teaspoon
    • ground nutmeg: 1/2 teaspoon
    • lemon juice: 1 Tablespoon
    • vanilla extract: 1/2 teaspoon
    • Topping:
    • all-purpose flour: 1 cup
    • brown sugar: 1/2 cup, packed
    • kosher salt: 1/2 teaspoon
    • unsalted butter: 1/2 cup (one stick) cut into small pieces


    Step 1: Preheat the oven to 350 degrees F. Butter and flour a 13x9 baking dish and set aside.

    Step 2: In a large bowl beat together the cake mix, oil, water, and eggs until smooth. Pour the mixture into the cake pan and set aside.

    Step 3: In a second bowl toss the apples, sugar, cinnamon, nutmeg, lemon juice, and vanilla until just combined. Set aside.

    Step 4:  Make the topping by pinching the flour, sugar, salt, and butter chunks until it is all the size of very small peas.

    Step 5: Assemble the cake by scattering the apples mixture evenly on top of the cake. Then, sprinkle the topping evenly on top of the apples.

    Step 6: Bake the cake for 30 to 35 minutes, or until a cake test inserted in the center comes out clean. Cool completely and slice and serve.
