Gluten Free Chocolate Chip Oat Almond Bars

You see, to be completely honest, I find it difficult to find delicious gluten free baked goods.  And it’s a must in my house and my son and husband are gluten free!  And they must not miss out on treats, right?!  And neither should you, if you have this (or any other) dietary restriction.

These Chocolate Chip Oat Bars are not just for the gluten free eaters. On no they’re not!  If you can eat anything your heart desires, you will love these, too!  Trust me!  

They’re sweet, buttery, chocolaty, and, of course, incredibly yummy!

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup golden brown sugar
  • 1 teaspoon salt
  • 1 tablespoon vanilla extract
  • 1 large egg
  • 1 cup oat flour (see notes)
  • 1/2 cup almond flour
  • 1 cup oats
  • 1-1/2 cups choc chips

Preparation

Makes approximately 25 small bars

Preheat the oven to 375 degrees F, and line an 8 X 8 X 3-inch baking pan with parchment, or grease it with butter.

In a medium-sized mixing bowl, combine the butter with the sugars, salt and vanilla.  Then gently blend in the egg.  

Mix in the flours, followed by the oats and chocolate chips.

Pour the batter into the prepared pan, and smooth the top with a flat-bottomed spatula.  Bake in the preheated oven until it’s set and is golden brown, about 50 minutes.

Let it rest for at least 1 hour before cutting.

Some additional notes:

Make oat flour by putting your oats in the food processor and blending until you have a fine powder!

FYI, both the oats and almonds add protein to this treat!
