Fresh Fig Sandwich

It’s prime time for figs right now, which is what gave me the idea.  My youngest boy has a big sweet tooth (inherited from me, I’m afraid), so the two of us tested this out for lunch!

It’s great to consider healthy ideas like this for kids — especially this September because it’s Childhood Obesity Awareness Month. And of course this is perfect for a lunch box!

INSIDE FIG SANDWHICHIngredients

  • 2 slices of your favorite bread
  • 1 tablespoon cream cheese
  • 2 small Mission Figs
  • A few spinach or basil leaves

Preparation

Toast the bread and spread the cream cheese on both sides. Slice the figs very thinly and place on top of one of the slices of bread.  Add the spinach or basil leaves to the other side and gently put the sandwich together.

Makes one sandwich.

A few additional notes:

To maximize the nutritional value, use whole grain bread, and to lighten this further you can use “light” cream cheese.
