It’s incredibly delicious and beautiful, it’s light and healthy, and best of all, it can be made a day in advance. In fact, the longer it marinates the better. How awesome is that when you’re juggling so many dishes for the holiday table?
And here’s a tip—if you have any of this salad left over after your holiday feast, add turkey or ham and it’ll turn into a scrumptious meal. Delightful!
*Please note that the actual prep time of this recipe is only 25 minutes, and the remaining time is totally inactive marinating time.
Make-Ahead Citrus Marinated Brussels Sprouts Salad with Cranberries Recipe
Go ahead and toss this savory-sweet dish together and let it marinate while you put together the rest of Thanksgiving dinner.

Servings: 4-6
Ingredients:
fresh orange juice: ½ cup, plus 2 tablespoons
fresh lemon juice: 3 tablespoons
apple cider vinegar: 2 tablespoons
honey: 2 tablespoons
whole grain mustard: 1 tablespoon
sea salt: 1 teaspoon
black pepper: ½ teaspoon
extra virgin olive oil: ¼ cup
Brussels sprouts: 1½ pounds
zest of Naval oranges: from 2 large oranges
Naval orange segments, cut into bite-sized pieces: from 2 oranges
thinly sliced red onion: ½ cup
dried cranberries: 1¼ cup
Directions:
For the dressing:
Step 1: Add the juices, vinegar, honey, mustard, salt, and pepper to a small mixing bowl or large glass measuring beaker. Whisk it until it's smooth. Then add the oil very slowly, constantly whisking as you pour. Once this is well blended, set it aside.
For the salad:
Step 2: Wash and dry the Brussels sprouts.
Step 3: Use a paring knife to trim the root ends off of the Brussels sprouts.
Step 4: Grate the Brussels sprouts in a food processor fitted with the grater attachment. (See notes.)
Step 5: Add the orange zest.
Step 6: Add the orange segments, onions, and cranberries.
Step 7: Whisk the dressing once more, and then pour it over all of the ingredients.
Step 8: Gently toss everything together, cover tightly with plastic wrap, and marinate in the refrigerator for at least 8 hours.
Step 9: When you're ready to serve, season to taste with salt and pepper if necessary.
Step 10: Serve!
Notes: Though I love doing everything from scratch when possible, to save time you can find packaged, grated Brussels sprouts at many markets this time of year.
