Sometimes we are in the mood for a little Tex-Mex for lunch or dinner. We love typical Southwestern flavors like spicy salsa, pulled chicken, rice & beans, and fresh guacamole. One of our favorite Southwestern foods is chicken and bean taquitos. They are like rolled up tacos that are fried or baked until crispy. I fill ours with simple ingredients and have a whole bunch of yummy fresh dips on the side for garnishes. They are a lot of fun for kids because they can be filled with anything and are the perfect kind of finger food. Make a variety of flavors and serve up a whole platter for dinner tonight!
Make Easy Chicken & Bean Taquitos
Cook up some of these Tex-Mex bad boys for dinner tonight!

Ingredients:
- cooked boneless skinless chicken breasts: 2 pounds, shredded
- taco seasoning: 1 package
- corn tortillas: 24
- cheddar cheese: ½ cup, shredded
- black beans: 1 can, drained
- vegetable oil: 1 to 2 tablespoons
- crumbled goat cheese or cotija cheese: ¼ cup
Directions:
Step 1: Preheat the oven to 450 degrees F. Line two large baking sheet with aluminum foil and set aside.
Step 2: Toss the chicken with the taco seasoning and set aside.
Step 3: Warm the tortillas in the microwave until just pliable.
Step 4: Assemble the taquitos by dividing even amounts of the chicken, cheddar, and black beans amongst each tortilla.
Step 5: Roll the tortillas and place them seam side down on the baking sheet. Brush the tops with the oil until they are evenly coated.
Step 6: Bake for 22 to 25 minutes or until golden brown. Garnish with crumbled cheese and serve. Serve with salsa, sour cream, and guacamole on the side.
