With berry picking season underway it is time to think about berry recipes. I love to make all kinds of strawberry desserts and baked goods, but, above all, I like to make jam. I always make a few half-pints of plain jam, then make some other ones with flavors like strawberry-lavender or strawberry-orange. There are so many delicious combinations. If you are new to jam making, or just want to make a small batch, try this easy skillet method. It works like a charm and is easier than getting out the heavy jam pot. Once you get comfortable with this strawberry skillet jam recipe you can start adding flavors like a split vanilla bean or some citrus zest. Just remember to have fun and preserve the flavor of the season!

Easy Strawberry Skillet Jam
All you need are 3 ingredients to make jam this spring!

Servings: 1 pint
Ingredients:
- strawberries, rinsed and hulled: 4 cups
- granulated sugar: 1/3 cup
- lemon juice: 2 tablespoons
Directions:
Step 1: Mash the strawberries in a bowl.
Step 2: Stir in the sugar and lemon juice.
Step 3: Pour the mixture into a large skillet and warm over medium-high heat. Continuously stir the jam, breaking up large pieces as you go. Once it thickens enough you’ll know because it will leave a trail when you drag the spoon across the bottom of the skillet, about 15 minutes.
Step 4: Ladle into prepared jars and process in a hot water bath if desired.
