St. Patrick's Day Frittata

Maybe corned beef hash is not your thing?  To be totally honest, it wasn't mine until earlier this month when I began exploring some St. Patrick's Day recipes. And I must say, this dish rocks!

 

It seems a lot of folks enjoy leftover corned beef hash with eggs, so I created this fabulous breakfast version.  What better way to say "Top of the morning to you!"

This frittata is lovely for brunch or breakfast — or you can slice it into small squares, place some toothpicks on the side, and you'll have a hearty, hot appetizer for your St. Patrick's Day party!

Ingredients:

  • Olive oil to coat the pan
  • 1 cup grated brown onion
  • 1 (approximately 1-pound) Russet potato, peeled and grated
  • 2 teaspoons finely chopped, fresh sage
  • 1/3-pound cooked corn beef, sliced into approximately 1/4-inch slices
  • 6 eggs
  • 1/3 cup grated Swiss or Gruyere cheese

Preparation:

Serves 4 to 6

Prep Time: 10 minutes

Cooking Time: 15 to 20 minutes

Place a medium-sized saute pan (about 10-inches) over medium heat. Add the olive oil.

Squeeze any excess liquid out of the onion and potatoes.  (Pressing them in a strainer over a bowl works perfectly.)  Then add the onion and potatoes to the pan.  Cook until the potatoes begin to brown, stirring occasionally, about 10 minutes.

Add the sage, cook for another minute, and season generously to taste with salt and pepper.

Crack the eggs into a mixing bowl, whisk until blended, and season with salt and pepper.

Gently pour the eggs over the ingredients in the saute pan.  Reduce the heat to medium-low and cook just until the bottom solidifies, about 3 minutes.  Sprinkle with the cheese and cover.  Cook covered until all of the egg has solidified, about 8 more minutes.

Gently slide the frittata out of the saute pan onto a plate or cutting board and let it cool until you're ready to slice and serve!

St. Patrick's Day Frittata

Some additional notes:

If you have a food processor, it's very easy to use the grater attachment to grate both the potato and the onion together.  It will spare your muscles, too!

If your pan doesn't have a lid, just use foil.

The best place to get your corned beef sliced to your specifications is at the deli counter!

For a delightfully refined corned beef hash, simply follow the recipe above and stop before you get to the eggs.
