Peanut Butter Oat Chocolate Squares

Oh, my gosh, were these ever a hit with my kids!  I mean, why wouldn’t they be, right? Chocolate, peanut butter and M & M’s,  need I say more?!

I love this sort of a treat because, while there’s no getting around that they are a sweet dessert, they’re also packed with protein so they can easily be an after school snack too.  This is not an empty calorie treat.  I believe in moderation, and I love when there’s nutritional value in a homemade treat!  

So please, serve this super yummy, easy to make dessert the next chance you get!  You’ll be as big a hit as the treat!

Ingredients:

  • 1 cup light brown sugar
  • 1 whole egg, plus 1 egg white
  • 2 cups salted, chunky peanut butter
  • 1 cup oats
  • 2 cups plain M & M’s
  • 1-1/2 cups semi-sweet chocolate chips

Preparation:

Makes 16 squares

Prep Time: 10 minutes

Baking Time: about 25 minutes

Preheat the oven to 350 degrees F

Line an 8 X 8 inch, square baking pan with parchment paper.  Set aside. In a large mixing bowl, use a large fork to blend the sugar with the egg and egg white.  Then blend the peanut butter into the mixture.  You will have a nice thick batter at this point.

Fold in the oats and M & M’s.  Then spread the batter evenly into the parchment lined pan.  

Bake in the preheated oven just until the batter has solidified, about 20 minutes.  (It should still look a bit doughy.)  Evenly add the chocolate chips to the top surface and return the pan to the oven.  Bake for another 3 minutes, and then use a small flat bottomed spatula to spread the warm chocolate cups into a nice smooth layer.  

Let this cool at room temperature for a couple of hours before serving.
