Asparagus and Ranch Dip

I will eat it just about any way I can and this week it is blanched, but still firm, with a side of ranch dressing. I guess in a way the ranch dressing harkens back to my favorite childhood treat of carrot sticks with ranch dip. I’ve always loved the tangy dressing paired with a rich, crisp vegetable. Here are is how I’ve been snacking on asparagus lately – how do you do it? 

Ingredients:

  • 1 pound asparagus
  • 1/2 cup fat free ranch salad dressing

Preparation:

1. Bring a pot of water to a boil. Snap the ends off the asparagus and boil them until  a fork passes through them. Then immediately drain the hot water and plunge the asparagus into a bowl of ice water. Remove the asparagus and pat dry.

2. Pour the dressing into a bowl and immediately start dipping and eating!
