What I Eat For Lunch When She Is At School-Cheese Toast With An Egg!

She absolutely loves it and I love the longer day I have at home to myself. When she is out this is one of my favorite lunches to make is this simple cheese toast. I spread a slice of my favorite rustic bread with pesto, add a sprinkle of cheese and top it with a poached egg. It is healthy, filling and a snap to pull together. I look forward to it every week! —

Pesto Cheese Toast with Poached Eggs

Ingredients:

1 egg

1 slice rustic country bread

2 teaspoons homemade pesto

1 large pinch coarsely grated Parmesan cheese

1. Spread the pesto on the slice of bread and top it with the Parmesan cheese. Pop the toast into the toaster oven or the real oven turned to 400ºF and toasted until the cheese is melted and lightly browned.

2. Meanwhile, poach the eggs in boiling water as you prefer to do it. I just carefully crack the egg into the boiling water and allow it to boil for about four minutes, or until the white is no longer transparent.

3. Slide the poached egg onto the pesto cheese toast and serve!
