Eight Vegetable Macaroni and Cheese Recipe (Hack)

I have to admit that I am rather proud of this one!  A simple twist on an easy and time-honored kid's meal adds a full serving of vegetables to their diets! 

Simply swap out the milk in your kids' macaroni and cheese for a can of V8 Juice!  One can of V8 juice contains celery, carrots, beets, parsley, lettuce, watercress, spinach and tomatoes.

Please don't keep this "secret" ingredient a secret from your kids!  Let them know they actually like vegetable juice!  (And they will!)

Both my boys, who are each quite picky in their own right, gobble this right up! Rather brilliant.  (If I do say so myself!)

Ingredients:

2 (6-ounce) boxes Macaroni and Cheese mix (I use Annie's Homegrown for a Gluten-Free version)

1 (5.5-ounce) can V8 juice

Preparation:

Serves 4 to 6

Total Prep and Cooking Time: less than 15 minutes

Make the pasta according to the package instructions. After you drain the pasta, instead of milk or water, mix V8 juice with the cheese mix that comes with the macaroni. And there you have it!
