There are an abundance of apples around our house these days and I am always thinking of new ways to use them. Baked apples are a great comfort food, so one of our favorite things to do is fill their centers with oatmeal and brown sugar and bake them until soft and sweet.
This is a great activity for kids, simply let them fill the cored apple with just about anything they want. Pecans, dried fruit and syrups work well, too! This is a healthy fall dessert that is also fun to make. To serve it when entertaining, add a scoop of ice-cream or whipped cream on the side.

apples (I prefer Gala or McIntosh for this): 4
light brown sugar (packed): ½ cup
quick-cooking oats: ¼ cup
cinnamon: 1 teaspoon
butter: 1 tablespoon cut into four pieces
hot water: 1 cup
Step 1: Preheat oven to 350ºF.
Step 2: Core the apples, leaving ½ inch at the bottom of the fruit so that it forms a deep well. Make sure to remove all of the seeds. Arrange the apples in a shallow baking pan.
Step 3: In a small bowl mix together the brown sugar and oatmeal. Drop the mixture into the wells of the apples, distributing mixture evenly amongst all four apples. Top each of the wells with a dot of butter. Make a thin slit in the apple skins all the way down the sides of each apple so they don’t burst when cooking.
Step 4: Pour hot water into the bottom of the baking pan. Cover the pan loosely with foil and bake for 20 minutes. Remove the foil and bake for another 20-25 minutes, or until the apples are soft and the oatmeal and brown sugar has formed a nice syrup.
