Quick Lemon Broccoli

I always tell my boys that eating broccoli is like eating a vitamin.  Somehow, this doesn’t motivate my picky six-year old.  He doesn’t love to see green on his plate, but with this yummy butter sauce, he gives broccoli a pass! Yay!

This dish is delicious served over brown rice because the rice will soak up any extra sauce! Add some protein and you’ll have created a perfect meal. (My Spiced-Tomato-Yogurt Chicken would also be fantastic with this!)

 

Ingredients:

  • 1 pound fresh broccoli
  • 2 teaspoons olive oil
  • 2 teaspoons unsalted butter
  • 1 1/2 tablespoons lemon juice
  • Salt and pepper
  • Parmesan cheese

Preparation:

Serves 4 to 6

Cut the broccoli into uniform spears.  Rinse, dry, and sprinkle lightly with salt.  Put a steamer into a pot with the water level just below it.  Over high heat, bring the water to a boil and then add the broccoli to the rack and cover.  Steam until the broccoli is tender, about 5 minutes.  (This is a standard method for steaming vegetables. Vegetables will vary in cooking times.)

While the broccoli is steaming, melt the butter with the olive oil in a large saute pan.  Add the lemon juice and season to taste with salt and pepper.  Strain the broccoli and add it to the saute pan so it is coated with the sauce.  Sprinkle with a bit of Parmesan cheese.
